- 50 g tomato
- 1 tsp ghee
- 2 tsp crushed pepper, 1 tsp cumin, garlic, ginger, turmeric, coriander leaves, salt
Method
- Pressure-cook bones with shallots, tomato, turmeric, ginger, garlic, salt and 5 cups water for 8 whistles, or simmer 2 hours.
- Add crushed pepper and cumin and simmer 10 more minutes.
- Temper in ghee, strain if you like, and finish with coriander.
Health note
A warm, salty soup is comforting in the first weeks of low-carb eating, when the body loses extra salt and water. If you have high blood pressure, heart or kidney disease, keep the salt low. Claims that bone broth heals the gut or joints are not backed by trials D.
