Ingredients

  • 1/2 kg (boneless, with fat) pork (பன்றிக்கறி)
  • 2 tsp (coarsely crushed) black pepper (மிளகு)
  • 2 onions, chopped (வெங்காயம்)
  • 2 tomatoes, chopped (தக்காளி)
  • 2 tsp ginger-garlic paste (இஞ்சி பூண்டு விழுது)
  • 1/2 tsp turmeric powder (மஞ்சள் தூள்)
  • 2 tsp red chilli powder (மிளகாய் தூள்)
  • 2 tsp coriander powder (மல்லிதூள்)
  • 1 tsp cumin powder (சீரகத்தூள்)
  • 1/2 tsp mustard powder (கடுகுத்தூள்)
  • 2 tsp coconut oil (தேங்காய் எண்ணெய்)
  • as needed salt (உப்பு)

Method

  1. Heat oil and saute the onion, ginger-garlic paste and tomato one after another.
  2. Add turmeric, chilli powder, coriander powder and salt and fry.
  3. Add a little water; once the masala is cooked, add the pork and enough water to cook it through.
  4. When the pork is tender and the masala is thick, stir in the crushed pepper, cumin powder and mustard powder and take off the heat.
