Estimated per serving from USDA FoodData Central and Indian Food Composition Tables 2017 values for the raw ingredients. Real numbers vary with brands and portions. Some ingredients here (such as game, organ meats or seafood not in the Indian food tables) use approximate USDA reference values.

Ingredients

  • 250 g goat fat or beef fat, firm (ask for 'ketti kozhuppu') (ஆட்டுக்கொழுப்பு அல்லது மாட்டிறைச்சி கொழுப்பு)
  • 2 tbsp ginger-garlic paste (இஞ்சி பூண்டு விழுது)
  • 2 tbsp black peppercorns, coarsely crushed (மிளகு)
  • 1 tbsp fennel powder (சோம்புத்தூள்)
  • 1 green chilli (பச்சை மிளகாய்)
  • a few, to taste curry leaves, salt (கறிவேப்பிலை)
  • half tbsp coconut oil (தேங்காய் எண்ணெய்)

Method

  1. Heat the oil and saute curry leaves, green chilli and ginger-garlic paste.
  2. Add the cleaned fat pieces and roast, stirring.
  3. Partway through, add salt, fennel powder and crushed pepper and keep roasting until cooked and browned.
Tips

Goat fat cooks through after a few rounds of roasting; beef fat needs a little longer.
