  • 1 onion, chopped (வெங்காயம்)
  • 2 tomatoes, chopped (தக்காளி)
  • 3 tbsp ginger-garlic paste (இஞ்சி பூண்டு விழுது)
  • 4 green chillies (பச்சை மிளகாய்)
  • 1 tbsp fennel seeds (சோம்பு)
  • 1 tbsp cumin seeds (சீரகம்)

  • as needed coriander leaves (கொத்தமல்லி)
  • 2 tbsp coconut oil (தேங்காய் எண்ணெய்)
  • 1 tbsp butter (வெண்ணெய்)

  1. Pressure-cook the cleaned trotters in plenty of water with ginger-garlic paste, salt and turmeric for 15 to 20 whistles (about an hour), until the bones are soft enough to chew.
  2. In a wide pan, temper cumin, fennel, green chillies and curry leaves in oil, then fry the onion and tomato.
  3. Pour in the cooked trotter broth, add more water if needed and boil for about 5 minutes.
  4. Add coconut milk, pepper, butter and coriander, and take off the heat.
