Ingredients

  • half a kilo mutton (ஆட்டுக்கறி)
  • 100 g mutton fat (ஆட்டுக் கொழுப்பு)
  • quarter kilo chow chow (chayote), chopped (சௌ சௌ)
  • 1 onion, chopped
  • 2 tomato, chopped
  • 3 tsp ginger-garlic paste
  • half a tsp turmeric powder
  • 1 tsp chilli powder
  • 2 green chillies
  • 1-inch piece cinnamon
  • 3 cloves
  • 2 cardamom (ஏலக்காய்)
  • half a tsp cumin powder
  • as needed rock salt
  • 2 tsp coconut oil
  • as needed coriander leaves

Method

  1. Pressure-cook the mutton (not the fat) with green chillies, 2 tsp ginger-garlic paste, salt and enough water.
  2. Temper cinnamon, cloves and cardamom in oil, then saute the onion, remaining ginger-garlic paste and tomato one after another.
  3. Add the mutton fat and chow chow and saute, then add the cooked mutton with its stock.
  4. Season with turmeric, chilli powder and salt and simmer until it thickens to a thokku.
  5. Garnish with coriander leaves.
