Ingredients

  • 1/2 kg shark (milk shark) (சுறா மீன் (பால் சுறா))
  • 1/2 kg shallots, finely chopped (சின்ன வெங்காயம்)
  • 2 whole bulbs (about 30 cloves) garlic, finely chopped (பூண்டு)
  • 2 inch ginger, finely chopped (இஞ்சி)
  • 6 green chillies, finely chopped (பச்சை மிளகாய்)
  • a little coriander leaves (கொத்துமல்லி)
  • a little curry leaves (கறிவேப்பிலை)
  • 4 tsp coconut oil (தேங்காய்எண்ணெய்)
  • as needed turmeric powder, salt (மஞ்சள் பொடி, உப்பு)

Method

  1. Cut the shark into large pieces and simmer for about 5 minutes in water with a little turmeric and half the salt.
  2. Cool, peel off the skin and crumble the flesh.
  3. Finely chop the shallots, ginger, garlic, green chillies, coriander and curry leaves.
  4. Heat coconut oil, fry the shallots until soft, then add the other chopped aromatics one by one.
  5. Add the flaked shark with the remaining salt and turmeric and stir-fry about 10 minutes until dry and fluffy.
