Ingredients

  • 100 g cauliflower (காளிஃப்ளவர்)
  • 100 g carrot (கேரட்)
  • 100 g cabbage (முட்டைக்கோஸ்)
  • half a bunch greens (keerai) (கீரை)
  • 100 g mushrooms (மஸ்ரூம்)
  • 1 capsicum (குடைமிளகாய்)
  • 2 bay leaves (பிரிஞ்சி இலை)
  • 1 inch cinnamon (பட்டை)
  • 2 cloves (கிராம்பு)
  • 2 green cardamom (ஏலக்காய்)
  • 5 cloves garlic (பூண்டு)
  • 1 inch ginger (இஞ்சி)
  • 10 black peppercorns (மிளகு)
  • 1/2 inch fresh turmeric root (பசு மஞ்சள்)
  • as needed salt, pepper powder (உப்பு)
  • 2 litres water (தண்ணீர்)
  • as needed (30 g when serving) butter (வெண்ணெய்)

Method

  1. Chop everything and put it in the water; bring to a boil.
  2. Reduce the heat to very low, cover and simmer about an hour, until the 2 litres reduce to about 1 litre.
  3. Strain and keep the broth.
  4. To serve, dilute 1:1 with water, heat, and add about 30 g butter with pepper powder and salt to taste.
